Chicken Meatballs – 1 Weight Watchers Smartpoint Each

Standard

Well, hello my friends.. can we just talk about how fast the summer has gone.  I wished for cooler weather when it was hot and humid and here is it and it’s making me realize that another summer is gone and in the books. I don’t want to put a jacket on. I want to walk around town in my t-shirt still.  Ah, those are the days when you can dash out of your house without grabbing a jacket… right?

OK OK.. so not all is lost when you have some comfort food to make.. That’s why I’m here.. stay with me.

I’ve just uploaded a new video for making Chicken Meatballs.  I started getting into replacing all of my ground beef recipes with ground chicken. Not sure when that started, but it was years ago.  I don’t particularly like the taste of ground turkey (anyone with me on that), unless I mix with ground chicken or there are a lot of spices and other tastes in it.  I digress.

These meatballs, simmering in a sauce for hours is the key to comfort food, I think.  Of course, then my house smells like meatballs for two days. LOL

I got 28 meatballs from this recipe and each one is only 1 Weight Watchers Smartpoint each.  C’mon now.. it’s true.

Here the new video:

You can, of course, change up your ingredients with different veggies, bread or cheese.. it’s your world.  I would highly recommend cooking the veggies first.. this is what gives them a sweet taste. Would you do that for me, please??

Let me know what you think and if you give them a try and let me know.  I’m all about simple.

Hearing from you means the world to me.  Please share, subscribe and like.

Happy Fall

Cauliflower “Potato” Salad

Standard

Well, my friends, I know it took me weeks to get you this “potato” salad video. You still love me?  Thank you. Wait, you did say yes, didn’t you?

OK, let’s talk about that it’s the end of August. It happens every year and I’ll always still be denial that summer goes by too fast.  You can already feel the coolness in the evenings. That’s ok.. I think we have some real heat coming at us this week anyway.

Raise your hand if you love potato salad. OK.  Raise your hand if you love cauliflower. OK then.  Well, my friends, this video is for you (pretending you all raised your hands for both. LOL).

You can’t go wrong with this salad. It’s fast, easy and comes together like that (snapping fingers).

It doesn’t need a lot of explanation; it’s pretty easy to follow and you or your guests will love it.  How about for Labor Day?  Maybe going to a party or something. It’s perfect.

Please give it a try and let me know how it comes out. I know it will be a NO FAIL. I promise.

Thank you for sticking by me and all the love you send my way.  It’s appreciated more than you know.

As the “Terminator” said.. “I’ll be back”. Am I aging myself here?

Love and hugs

Judy

Please share my social media sites with friends. How fun to all be together.

Cauliflower Fried “Rice”

Standard

Hello Hello, my friends.  Where did July go.. I want to know… tell me, please??  I know we say this every summer.. it just goes by too fast.

I wanted to share that I have a new video that shows how to make Cauliflower Fried “Rice”.  I’m telling you, it’s so good.  It comes together in 10 minutes or less.  Make it what you want by adding in your favorites veggies or proteins.

Like I said in my video, I don’t like the frozen riced cauliflower you buy in the market.. just has a funny taste.. but do buy the already riced cauli in the produce section. Better yet, if you have a food processor, save yourself some money and rice your own.

I hope you see how easy it is to pull this meal together.

I love hearing from you and don’t forget to give me a thumbs up and subscribe.

My next cauliflower video will be Cauliflower “Potato” Salad.  Stay with me.

Thank you for all your support and being here. I love the response.

Cauliflower “Potato” Salad (with WW Smartpoints)

Cauliflower “Potato” Salad (with WW Smartpoints)

Happy Summer, friends!!!!  I hope you are all enjoying your summertime and staying healthy and safe. So far so good over here.  The weather has been quite nice.  We took a trip to Lake Tahoe a couple of weeks ago and was such a nice break.  Beauty, is the word I would describe Tahoe. Just a beautiful place to hike, bike and enjoy water activities.

Here are just a few of the 100’s of pictures I took.  I told my husband, I just can’t stop taking pictures.  Seriously, it was that beautiful. I even saw a bear’s butt.  Don’t get that confused with a bare butt now. LOL

Ok, so moving on from vacations to food.. now, that’s more like it. Chop chop, Judy. Speaking of “chopping”….

Of course you know all the rage is about cauliflower.  I love cauliflower and grew up on it. Mostly, my mom would roast it in the oven.. plain, salt, that’s it.  There is a lot you can do with this beautiful white vegetable.  Check out my YouTube channel where I make a dish called “Zahra” (meaning flower).  CLICK HERE to watch it.

I’ve made you wait long enough.

I made this cauliflower salad for my family and then again for a July 4th party. This is so good.. the crunch, the “potato salad”, the color. Just yum.

Makes approximately 10 servings.  You can add even more veggies to make it bigger.  Each serving is 1 Weight Watcher Smartpoint (and that’s for the mayo).

Ingredients:
1 large head of STEAMED cauliflower, cut into bite size florets
3 hard boiled eggs
1/2 cup chopped dill pickles
1/3 cup chopped red pepper
1/2 cup chopped asparagus
1/2 cup of corn
1/3 cup of chopped red onion
1/3 cup chopped curly parsley
3/4 cup light mayonnaise (I like Miracle Whip) (7 smartpoints)
1-2 T of lemon juice.
Salt, pepper, paprika or any herbs or spices of your choice. I love that the paprika gives it a little orange color.

Now, you know this your world and you can put what you want in this salad for other veggies, but this is what I did.

Steam your cauliflower florets. I think it’s best to steam as they won’t get water logged.  I steamed for about 15 minutes.  Steam it to the texture you like.  I didn’t want them too raw, but not soft either…. so like baby bear.. “just right”.

Once the florets are steamed through, let cool.  While cooling, chop up your other vegetables.

Look how pretty.

The dressing is fairly simple. I’m all about simple, folks.

Mix the mayo with your herbs and spices you choose and the lemon juice or you could use apple cider vinegar as another option20180704_174343

Once your cauliflower is cooled, add it to the bowl and mix it with the dressing.

Boom!! Done!!  Cover and let sit for a few hours or overnight in the fridge… or as they used to say in the old days, “ice box”.

Those eggs make all the difference if you ask me. So many options to add to this, really.

Give it a try and be the talk of the town.. or the party.. or your own family.. or yourself.

Thanks for stopping by and checking out the blog, once again.  You are all the best in my book. I do have a book.

Love your comments and let me know if you try it.

Eggplant/Veggie Chili

Standard

Can you believe it’s the end of April already?  I had my fireplace on last night and this morning.. Still chilly around here.. and speaking of CHILI (LOL)….

I have a new video making a simple, delicious Eggplant Veggie Chili.  I was inspired with this dish at a restaurant recently, so I thought I’d make it my own.

Please take a gander and let me know if it’s something you would try out?

I can’t thank you enough for your support and my new subscribers for joining me.

Love to hear from you all.

Pumpkin Cake

Standard

Hi Friends, I’m back pretty quick, huh?    The weather here is turning into crisp fall days. The leaves are falling quickly and it’s chilly one day and warm the next. We are starting to get buds on the flowers again.  Welcome to New England.  I hate to think what’s coming.  The Farmer’s Almanac says it will be a brutal winter, but don’t they say that every year?

Hey, so I as able to sneak in another video while I was at my mom’s, but it’s just me this time.  I’ve been a member of Weight Watchers for the past year and want to start sharing recipes that I make/create for member or for anyone, really.  I don’t change the cooking in my home.  My family eats what I make.   Even with 2 gluten free (celiac) daughters we all just adjust.

So with that said, I went and made a sugar free pumpkin cake that is so good.  Now, if you can stay away from too many pieces, you’re in good shape.. well, that’s the idea anyway…. to get in good shape, right?

Enjoy the short video and I hope you make it.

Thank you for all your lovely comments.. they mean so much to me.
